Max and I cooked a lot this weekend. We made this carrot cake from a box mix but we added ingredients to make it the ultimate carrot cake. It included pineapple, nuts, coconut and raisins. It is a very easy recipe and it tastes like a cake you'd only make at Christmas or for a special occasion. Max made Cinnabon's cream cheese frosting for it. Max will have to post that recipe.

The frosting recipe is basically one part (by weight) butter, one part cream cheese, and two parts powdered sugar. Cream the butter and cream cheese together some before adding the sugar (we were told it made things fluffier that way, but then we put this extra-fluffy frosting on hot rolls).

Add some vanilla and lemon flavoring to taste (yes, there's a specific amount, but that's for a 60 pound batch of frosting).
